This renowned Spanish chef has created a new menu in a shorter and more affordable format, but without losing the essence and quality that characterize his cuisine. In a double appointment with Quique Dacosta at the Mandarin Oriental Ritz hotel, the new Chronos menu is revealed, specially designed for diners who enjoy the Ritz terrace under the management of Deesa, his two Michelin-starred restaurant. Dacosta, known for his innovation and culinary excellence, presents dishes that blend the sea and the land, highlighting the beauty, sensuality, and fragrances of seasonal ingredients. Deesa, located in the elegant Alfonso XIII lounge of the Ritz, used to offer two tasting menus, Historical and Contemporary, at 240 euros, featuring Dacosta's best creations. However, with the opening of the terrace, a new, more accessible menu has been introduced at 120 euros, consisting of four acts where diners choose from exceptional dishes such as Saffron Fideuá, Cold beetroot and dill soup, and Crème brûlée with roasted onions and Iberian pork jowl. In the following acts, Quique Dacosta surprises with unique rice proposals, from Albufera rice with marbled oyster to a creamy one with meat and roasted red peppers in a wood-fired oven. Also noteworthy are the Rodaballo cooked at low temperature with Jerez pil pil and the milk-fed veal sweetbread, each dish expertly crafted and impeccably presented, reflecting the chef's passion for gastronomy. To accompany this exquisite menu, various wine pairing options starting from 150 euros are offered, creating a complete and memorable gastronomic experience.
